Think of a strata as a delicious, layered bake! It's an Italian version of bread pudding--- filled with bread (You can use day-old bread, your favorite bakery bread, or canned biscuits, like me!) cheese, eggs, and whatever tasty bits you fancy—veggies, meats, herbs—just all mingling together. You mix everything up, let it cozy up in a baking dish for a bit, then pop it in the oven until it's golden and irresistible. It's like a hug in breakfast form, perfect for relaxed mornings or brunch with friends!

You will often find strata referred to as savory, and there are so many options! You can make breakfast, lunch, or dinner strata using your favorite ingredients.

How to Make Veggie Breakfast Strata

To start, simply lightly grease a medium baking dish (9 x 13″) with butter or cooking spray and pre-heat your oven to 400 degrees Fahrenheit then you will prepare the batter! Whisk together the eggs, milk, and herbs + seasonings. Add your biscuits (homemade or store-bought) pieces into the baking dish and spread around evenly then pour the batter mixture atop pieces. NOTE: It's OK if biscuits float to the top at this point. Then add in the greens and herb roasted tomatoes and bake to golden cheesy perfection!

  • Unsweetened Almond milk. At room temp.(You can use whole milk or your fave plant-based milk)
  • Largeeggs. Atroom temp.
  • Herbs + Seasonings. I use dried parsley, ground mustard, garlic powder + smoked paprika.
  • Spinach + kale. Feel free to add in your preferred greens.
  • Sharp or mild cheddar. Freshly shredded or grated.
  • Roasted herb tomatoes. See my recipe for creating these delicious umami tomatoes!
  • Sea salt + pepper. Enhances all the flavors.

How to Make Herb Oven Roasted Tomatoes

The key to this recipe is to start with great-quality tomatoes. Choose a mix of large and cherries, and several different colors if you can find them. Click here for the full recipe + tips

INGREDIENTS

  • Tomatoes.You'll need about 2 lbs. of tomatoes for this recipe. Again, choose a mix of small, large and cherries or any other shape + kind of tomato you like.
  • Olive oil. Don't skimp on the oil! It helps concentrate the tomato flavor and makes a nice jammy texture. You can use these roasted tomatoes like a dressing or sauce.
  • Herbs + Seasonings. A great addition of flavor. Adds such savoriness from the salt, black pepper, smoked paprika, parsley, basil, oregano, red pepper flakes, thyme, etc.
  • Thyme sprigs. You can add rosemary leaves as a substitute as well.
  • Garlic.You'll need about 3 garlic cloves, mincing them into smaller pieces to help spread the flavor.

Preheat your oven to 400 degrees Fahrenheit and prepare a baking sheet by lining it with parchment paper.

Add the seasoned tomatoes to the baking sheet (in a single layer) and add thyme sprigs and garlic cloves all around. Bake for 25-30 minutes or until tomatoes are charred, wilted, and tender. Remove and let cool slightly.

  • 1 (16 oz) can organic biscuits, store-bought or homemade
  • 2 cups Almond milk, room temp.
  • 10 large eggs, room temp.
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

  • 1 teaspoon ground mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 3 cups spinach, chopped
  • 2 cups chopped kale
  • 2 cups shredded Sharp Cheddar
  • 2 cups roasted tomatoes

Instructions

  • To start, simply lightly grease a medium baking dish (9 x 13″) with butter or cooking spray and pre-heat your oven to 400 degrees Fahrenheit.

PREPARE THE BATTER:

  • In a large bowl, whisk together the eggs, milk, and herbs + seasonings. Set aside.

PREPARE THE BISCUITS:

  • If using store-bought biscuits, remove from can and cut each biscuit dough into 4 triangular pieces until all pieces are cut.

  • Add your biscuits pieces into the baking dish and spread around evenly then pour the batter mixture atop pieces. NOTE: It's OK if biscuits float to the top at this point.

  • Next, add the following: chopped spinach, kale, cheddar cheese, and roasted tomatoes. For an extra layer, you can add additional cheese, if desired.

  • Bake the strata for 20 minutes (while loosely covering with foil), then remove foil and continue baking for the remaining 25 minutes or until edges are golden brown (or slightly dark brown, if preferred) and the center is set.

  • Remove from oven and let it rest for 10 minutes before slicing and serving.
