  • 2 large eggs
  • 1 cup granulated sugar
  • 3 ripe bananas, mashed
  • 1/4 cup buttermilk
  • 1/4 cup oil
  • ½ tsp vanilla
  • 1 3/4 cups all-purpose flour, measured then sifted
  • ½ tsp cinnamon
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 5 oz raspberries, fresh or frozen
  • 3/4 cup white chocolate chips
  • 1 tsp powdered sugar, to dust, optional

Instructions

  • Preheat oven to 350°F.

  • Lightly grease a9"×5" loaf pan.

  • In a small bowl, combine flour, cinnamon, baking soda and baking powder. Set aside.

  • In a large bowl, on medium speed, beat sugar and eggs about 2 minutes.With a fork mash the bananas. Add bananas, buttermilk, oil and vanilla to sugar/egg bowl. Give it a quick mix.

  • Add flour to mixture and mix.

  • Pour 1/3 of the batter into a loaf ban, add some chocolate chips and raspberries. Repeat two more times.

  • Bake in the preheated oven at 350°F for 30 minutes. Turn heat down to 325°F and bake another 15-20 minutes. Check readiness of banana bread with a toothpick, it should come out clean.

  • Remove bread from the oven. Cool about 10 minutes and remove from loaf pan to cool completely.

    A little reminder that the pan you suggest is NOT a “standard sized” loaf pan, would’ve been great.? Ugh…my fault for assuming it was. Now my oven is a huge mess to clean up as a ton of it overflowed from my “normal” sized loaf pan.
