I love myself a good s’more dessert. I’ve made so many in the past such as the Oven Baked S’mores, Peanut Butter Cup S’mores Skillet, S’mores Dessert Cups and Air Fryer S’mores Crescent Bombs. Dare I say that anything with a s’mores flavor tops the list of my favorite desserts? And this Crumbl cookies recipe combines it with brownie! Win-win.

Plus, I love Crumbl cookies. I said it. I’m not taking it back. I love their giant cookies but I can’t always get to a Crumbl store or sometimes I just don’t want to pay $3-$4+ a cookie. That’s when I make my own.

Today, I’m sharing with you a copycat recipe of the Crumbl S’mores Brownie Cookie that rivals the original. A dark chocolate brownie cookie is topped with a delicious graham cracker chocolate chip cookie and finished off with a marshmallow cream.

So, so good. And surprisingly easy to make!

WHAT ARE CRUMBL COOKIES?

Crumbl is a rather new cookie bakery that was started by two cousins in Logan, Utah in 2017. Cousins, Sawyer Hemsley and Jason McGowan set out to create the world’s best chocolate chip cookie. After some trial and error, testing ingredients and baking methods, Sawyer, Jason and their family opened up the first Crumbl store in Utah when Sawyer was still attending Utah State University.

Crumbl’s delicious cookies wouldn’t be complete without their iconic pink packaging! Crumbl’s boxes were designed to perfectly fit each Crumbl cookie side-by-side, whether in a 4-pack, 6-pack, or 12-pack box. The “4-pack” pink box — the brand’s most popular and notable — was developed in 2018, shortly after Crumbl sold its very first cookie.

They opened with just milk chocolate chip cookies and milk but quickly expanded to the rotating weekly cookie flavors that we know today. Crumbl’s award-winning milk chocolate chip cookie has always been on the menu with their chilled pink sugar cookie becoming a semi-permanent menu item soon after.

Since opening its doors in 2017, Crumbl Cookies has expanded to over 200 bakeries in 32 states nationwide, making it the fastest-growing cookie company in the nation.

CAN I MAKE SMALLER CRUMBL COOKIES?

Yes, absolutely!! Crumbl makes their cookies so large that they are easy to share. If you look at the serving size of each Crumbl cookie in the store, it says “two servings”. Plus, I think the size adds to the novelty of the cookies because they are just so giant and delicious.

That being said, I recommend making 12 cookies out of this recipe. They won’t be as giant as the Crumbl version, but they will be much more manageable. If you double the recipe, you can easily get 24 normal size, delicious S’mores Brownie cookies.

If you prefer GIANT cookies, I made only 6 cookies with this recipe the day that I photographed it. That’s why they are GIANT!! So, you do you. If you like smaller, more manageable cookies, make 12. If you like giant ones, make 6.

HOW TO MAKE S’MORES BROWNIE COOKIES

1) Preheat oven to 350 degrees.

2) Cream together the butter, granulated sugar and brown sugar in a stand mixer until combined.

3) Add in the egg and the vanilla and mix.

4) Add in 1 3/4 cup flour (you should have 1/4 cup flour left to set aside), baking soda, baking powder and salt. Mix until dough is completely combined.

5) Remove half of the dough to a separate bowl and set aside. Add graham cracker crumbs to the dough left in the stand mixer and mix until combined.

6) Stir in chocolate chips. Remove the graham cracker cookie dough from stand mixer bowl and place in another bowl and set aside.

7) Put the remaining cookie dough (the first half you removed) into the stand mixer and add in the 1/4 cup flour and cocoa powder. Mix until combined.

8) Remove the chocolate cookie dough from stand mixer bowl and separate into 6 equal portions. (If you want to make smaller cookies – which I recommend – separate into 12 equal portions.)

9) Roll each piece of dough into a ball and set on baking sheet. Put 6 large cookies or 9 smaller cookies on a baking sheet at a time. Slightly flatten the cookie dough balls with your hand until they are about a 1/2 inch thick disc.

10) Now do the same thing with the graham cracker dough and separate into 6 (for large cookies) or 12 (smaller cookies) equal portions. Roll into balls. Flatten in your hand to the same size that your chocolate cookie dough discs are. Gently place the graham cracker disc on the chocolate dough discs on the baking sheet.

11) Bake at 350 degrees for 14-15 minutes (large cookies) or 11-12 minutes (small cookies).

12) Allow cookies to cool for 10-15 minutes on tray. Top each cookie with 1-2 tablespoons of marshmallow creme. Sprinkle with graham cracker crumbs.

Can I make smaller cookies with this Crumbl cookie recipe?

Absolutely. If you make the recipe as is, just divide the dough into 12 cookies. That will give you a more manageable sized cookie.
